Farmers market and easy pesto recipe

Hi!

So, we finally made it to the farmers market in Austin, after several attempts. It is worth a visit, if you are in Austin.

The drought that hit the country is surely not helping the farmers, but we did find some great pears, peaches and cherry tomatoes. With the help from our amazing basil, we had a lovely whole wheat pasta dish for dinner.

Here is the recipe:
2 cups of fresh basil
1/4 cup of raw almonds
1/4 of olive oil
1/4 cup of goat cheese ( we found some really good one at the market too)
Salt and pepper
10 cherry tomatoes cut in half
 
Blend everything except the tomatoes
Place the mixture in a bowl with the tomatoes, a few table spoons of the pasta water, and the pasta
Toss to combine and serve
It was very tasty and simple, using our beautiful basil.

I strongly recommend growing your basil. It is so expensive at the grocery store!
